Pumpkin Peanut Butter Cookies
These are the best whole-food vegan pumpkin cookies ever! Moist, delicious and healthy too!

1 cup packed pitted dates soaked with 1/2 cup water until soft
1 cup canned pumpkin
1/2 cup natural peanut butter
1 T apple cider vinegar
2 t vanilla
2 t pumpkin pie spice
1 t cinnamon
1 t baking soda
2 cups rolled oats
1/3 cup non-dairy chocolate chips (or more)
Place dates (with soak water), pumpkin, peanut butter, vanilla and vinegar in a food processor work bowl fitted with S blade. Process to creamy. Add spices and baking soda and mix well. Add oats and chocolate chips and process until well combined, but still chunky. Scoop out dough and place on a cookie sheet lined with parchment paper. Bake at 350 degrees for 15 – 17 minutes.
